Whisk together balsamic vinegar, honey, and olive oil. Set aside.
Warm goat cheese in the microwave for about 20 seconds. Stir until creamy.
Arrange your salad- on two small plates arrange a heaping handful of arugula, 3 slices proscuitto, and slices of peaches. Place a large dollop of goat cheese (½ prepared amount) into center of salad.
Drizzle with balsamic vinaigrette and sprinkle with fresh ground black pepper and salt to season.
