Peach and Prosciutto Salad

  • 2 large handfuls of arugula
  • 6 slices prosciutto
  • 1 peach sliced thin
  • 2.5 oz goat cheese warmed
  • 2 tablespoons good balsamic vinegar
  • 2 tablespoons good olive oil
  • ½ tablespoon honey
  • Salt and Pepper


  • Whisk together balsamic vinegar, honey, and olive oil. Set aside.
  • Warm goat cheese in the microwave for about 20 seconds. Stir until creamy.
  • Arrange your salad- on two small plates arrange a heaping handful of arugula, 3 slices proscuitto, and slices of peaches. Place a large dollop of goat cheese (½ prepared amount) into center of salad.
  • Drizzle with balsamic vinaigrette and sprinkle with fresh ground black pepper and salt to season.
  • Serve immediately.
