Old Fashioned Blue Cheese Wedge Salads

Ingredients
  

_For salad_

  • 1 head iceberg lettuce cut into 6 wedges
  • 4 slices of bacon cooked, and crumbled
  • 1 pint baby tomatoes I used heirloom, sliced
  • ½ red onion diced

_For dressing_

  • ½ cup sour cream
  • ½ cup mayo
  • 1 tablespoon grated onion
  • 3 tablespoons milk or cream to taste
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon fresh tarragon minced (or ½ teaspoon dried tarragon)
  • 5 oz crumbled blue cheese
  • ½ teaspoon ground black pepper

Instructions
 

  • Combine all ingredients for dressing in a mixing bowl. Stir well to combine. If dressing is too thick, add extra milk to achieve desired consistency.
  • Prepare 6 wedges on individual plates. Pour generous portion of dressing over each wedge.
  • Garnish with bacon crumbles, chopped onion, and sliced tomatoes.
