You’re going to love love love this recipe! I’ve been making this salmon recipe for years, so you know it’s going to be a good one. It was inspired by a dish that I had at Real Seafood in Ann Arbor, Michigan when I was back in college. And I have been making it routinely ever since.
…Or as routinely as I do anything in my life. Which is probably on par with a twice annual repeat.
(And, yes, I lived this way even before I started a food blog.)But basically, in my mind, there is nothing worse than eating the same meals week after week. I am unclear if other people truly live this way, but when reading food blogs’ comment section there’s always the handful of posters who say things like “I am going to add this into my weekly rotation!” Implying that they are eating 7 meals only, perhaps with the only deviation being the day of the week they elect to make the meal.
Don’t get me wrong. I am a sucker for having favorites. I do typically have my go-to restaurant orders at my favorite restaurants and deviate minimally. (Because I would find it highly upsetting if I accidentally ordered a sub-par meal at my favorite restaurant, but knew my favorite meal was sitting in the kitchen, waiting to be served to someone else who made the smarter selection…) So basically I’m just a walking pile of contradictions. Anti-routine, but still change averse? (But I still don’t go to the same restaurants every week.)
Life would just be too boring that way.
So, armed with this knowledge, you can now understand why this recipe that I do make on repeat is so significant. The salmon is the perfect backdrop to the red-pepper slaw. The rich, fatty salmon complements the light and fresh flavors of the slaw so well.
Plus the time it takes to prepare is literally the time it takes to bake the salmon. You will be amazed at how quickly it all comes together.Note- this recipe is for 2 people, but can easily be adapted for a larger crowd. Additionally I’ve made this by pan frying the salmon and finishing in the oven, which is also delicious and adds extra crunchy texture to the salmon.
