If anything gets my heart aflutter is is most certainly these roasted beauties. Confession: I am not used to craving things that are not caffeinated or sugary and I am not sure what to do with myself. My body and brain are so confused.
As I’ve asserted previously, roasting vegetables is one of the best ways of making a quick side dish. The only conundrum is usually knowing exactly how long to roast, but in the era of the internet other people have likely solved this for us, and roasting times can be easily googled for maximum efficiency. The roasting time on this recipe, for example, is 10-12 minutes in a 450 degree oven.
I suggest aggressively oiling these bad boys and rolling them around a bit in the oil until they are heartily covered. Seasoning with salt and pepper is also crucial.
The vinaigrette is delightful and a MUST addition for this recipe- freshly squeezed lemon juice mixed with just a little bit of mustard for emulsifying, and honey to cut the acid. The beauty of this little roasted broccolini with lemon vinaigrette side dish is that it can be served along side just about anything- chicken, beef, fish, lamb… We might have tried it out at least that many times “just to see” what the optimal pairing would be…. But in reality you can really just skip a protein and munch on these all evening long.
