This is one of those incredibly tasty but also incredibly easy meals that exemplifies all things summer. It is also one of those recipes that you have, have, HAVE to find the best quality ingredients money can buy. The whole point of simplistic recipes is to let the pureness of the whole ingredients shine.
This might be my new favorite summer meal for this reason.
And there is warmed goat cheese.

This salad started out in concept as an homage to the Italian melon and prosciutto appetizer that is a classic on many Tuscan menus. I’m not going to lie though.. cantaloupe just isn’t my thing. And the market had these amazing peaches. And in my little mind you just can’t possibly go wrong with juicy in-season peaches.
(And let’s be honest, that’s definitely what I did.)
Incidentally, even though Dave and I just ate this for a “for-two” weekend meal, I think a larger portion of the Peach and Prosciutto Salad would make a beautiful presentation for a family-style dinner party. Clearly I was obsessed with how this meal looked because I couldn’t stop taking photos…
(And clearly couldn’t refrain from putting them all on the internet).

Peach and Prosciutto Salad
