Mint Mojito Iced Coffee

This recipe for Mint Mojito Iced Coffee was inspired by one of my favorite drinks at the national coffee shop chain Philz Coffee! Awww Philz, I remember you from the early San Fransisco days! (But let’s be real… majorly happy to have a location in my city of San Diego as of a few years back).

The Gourmet Gourmand home is typically the land of coffee snobbery in all forms… my husband and I buy expensive and pretentious light roasted coffee, and have one of those special burr grinders for optimal pour-overs. So my adoration of a creamy, sweet, minty concoction hit me as a bit of a surprise.

But it was definitely a more than welcome surprise! So good!

And since Philz-going is currently a bit of a challenge with social distancing…. And caffeine is so so so so so so necessary during the perpetual hamster-wheel of life, work, and parenting during the era of covid19…. let’s just say, Mint Mojito Coffee is going to become a new beverage staple of my home.

Mint Mojito Iced Coffee

How to make

To make this recipe, all you need is the following:

  1. A fresh pot of coffee
  2. A little sweetener (I used honey, but anything you have around will work)
  3. Half and Half (to taste)
  4. Mint
  5. A Cocktail Shaker
  6. Ice

You start by mixing the honey, or alternative sweetener, in the coffee (this helps the sweetener to dissolve properly), then dump the coffee, half and half, mint into your shaker over ice. Then shake it up thoroughly and you’re done!

The shaking method ensures you get the lovely foamy bit that floats on the top of the drink. If you don’t care about that, you can simplify this recipe by just stirring everything together (but if omiting shaking, I’d advise that you muddle the mint beforehand, or else you won’t get much of the minty flavor).

Serving Suggestions

I’m planning to serve this coffee up to me, myself, and I this weekend… and honestly would probably be very satisfied with a cup of this Philz Mint Mojito Coffee on its own. (Possibly while hiding under the covers). But, in the event I need an additional treat, one of these will be on my plate:

  • Blueberry Coffee Cake
  • Cornmeal Waffles with Baked Bourbon Peaches
  • Fresh Strawberry Corn Muffins
  • Chocolate Cherry Muffins

Equipment

  • Cocktail Shaker

Ingredients
  

  • 12 oz Freshly Brewed Coffee
  • 2 Tbsp Honey +/- to taste
  • Splash Half and Half
  • 10 Mint Leaves + more for garnish
  • Ice

Instructions
 

  • Add honey to hot coffee and stir until dissolved.
  • Add mint leaves and ice into cocktail shaker.
  • Pour coffee and half and half into the shaker. Add lid and shake vigorously until frothy.
  • Pour into serving mug or cup. Garnish with additional mint as desired. Enjoy!
